Deep Roots

Chef **Andrius Kubilius's** new restaurant in Vilnius Old Town, Trakų St. 14. A slow food experience destination where dishes are crafted from local "Farmers Circle" farm products. The restaurant's concept is based on **Elena Starkienė's** (the owner's great-grandmother) preserved "Light Dishes Collection" and manuscripts, which Kubilius transforms into new flavour combinations. A 5–14 course tasting dinner is offered, along with an exclusive "Chef's Table" for only 10 guests. Kubilius was long associated with the success of Nineteen18 — it was the restaurant he led that entered the inaugural group of Lithuanian Michelin-starred restaurants.
